What do I cook when I’m in a hurry and have zero motivation and/or inspiration?
Stir fry! I literally had this meal ready in 25 minutes.
1. Chop some (or lots in my case) veggies while the rice and chicken are cooking.
2. Toss the huge pile of veggies into the sizzling wok. Sorry, no step-by-step pictures since my camera was not in the kitchen at this point. It’s something about a hungry husband who was rushing me.
3. Tell husband dinner is ready and move out of the direct path to the food.
4. Smile and heave a sigh of relief when he says, “This is good!”
Amen. Thank God for stir fry.
