The process is so simple that I might just live off candied citrus and fruits the rest of my life.
Slicing these beauties was probably the second best part of this 5 minute process. The smell is heavenly and it took everything I had to not eat them before I finished.
All you need is 1 cup of water and 1 cup of sugar. Let the slices come to a boil and then simmer for about 20 minutes or until translucent.
If these don’t make you smile, I don’t know what will. If you like citrus on the sweet side, feel free to add an extra 1/2 cup of sugar. I think that adding a small stick of cinnamon would add a nice, fragrant touch to the candied lemons – I’ll try that next time!
