Back in the Saddle

I have a confession to make.

I found a way to keep baking even after this little incident.

Between then and now, there have been Key Lime Cupcakes, Chocolate Creme Pies, Chocolate Peanut Butter Cupcakes, Double Fudge Irish Cream Cookies and a few other goodies. I cheated and am not regretting it one bit.

Maybe having a hand mixer is overrated? Um, never mind. I had to borrow my mom’s mixer a few times.

Last Wednesday, I couldn’t be more excited to get home from work. That is always exciting but that day in particular, I knew there was a little 4 pound box patiently waiting on me.

I didn’t expect any extras in the box, other than the mixer. On a side note, I pretty much research for days (sometimes weeks or even months) before we purchase stuff. That’s how I roll.

Oh, look! I think this is called a Professional Chef’s Wisk. Fancy schmancy stuff. Don’t ask me what I’m supposed to do with it though.

And look at this lovely silicone spatula? Love.

Ah, yes. The bare necessities of any decent hand mixer. The beaters (with no center posts!).

I am in love. I will get back to you with another butter-laden recipe, the minute I get around to using it!

Happy April 1st! 🙂
