Homemade Larabars: Chocolate Cherry

I love Larabars. They are tasty, filling and made with a minimal amount of natural ingredients. Actually, I should probably come clean and start from the beginning. The beginning means I get to tell you how much I look forward to snacking throughout the day.

Snacks > meals. Maybe it has something to do with not having ever experienced the traditional Preschool snack time ritual: chocolate milk + carpet to nap on. At least that’s what my husband tells me.

While these bars aren’t an exact replica of my beloved Larabar, I have to say they are a pretty good substitute. Especially since I don’t want to spend $2.50 every single time the craving hits or have to run to the store for the ingredients.

Lately, I’ve been training for a triathlon and sometimes with 2-a-day workouts, it’s tough not feeling hungry all the time! It is safe to say that this creation was a direct result of some chocolate cravings much needed pre-workout snacks.

Too much chatter, not enough chocolate.

Chocolate Cherry Larabars 
makes: 4 bars
inspired by: Cherry Pie Larabar

What you will need:

● 1/2 cup dates
● 1/2 cup unsalted peanuts
● 1/3 cup mini chocolate chips
● 2/3 cup dried cherries
● 1 tsp vanilla extract
● 1/4 cup melted chocolate chips (totally optional)

Here’s how you make them:

● Chop dates into small cubes and roughly chop the dried cherries.
● Using a food processor, blend peanuts until they look like little crumbles.
● Add the dates, cherries, and chocolate chips. Pulse mixture to blend.
● Splash in the vanilla extract and optional melted chocolate chips.
● When you are done blending, your mix should look slightly lumpy but cohesive enough to pack into a ball.
●  Lay the mixture on one end of a rectangular piece of plastic wrap. Roll into a log and slowly mold with hands until you have a flat shaped mixture.
●  With a sharp knife, cut mixture into bars. Store in plastic wrap refrigerated until ready to eat.

p.s. This recipe makes 4 bars but if you noticed, I ate one before I took pictures. They are that delicious.
