Another cookie recipe and I am not sorry.
These cookies were on my to-bake list for almost 2 years! I would keep forgetting about them and of course, molasses was never a top priority on the grocery list either.
These are delightfully crispy on the edges and chewy on the inside. Perfection.
I love how the molasses really shines through and the sugary coating makes a crackling sound in your mouth.
These would be perfect for a Christmas gift all wrapped up in a cute plastic bag and tied with ribbon!
Molasses Sugar Cookies
Time: 50 min
Makes: about 2 dozen
1/2 C canola oil
1 1/4 C sugar, divided
6 T unsalted butter, softened
1/2 C dark molasses
1 large egg
1 C all-purpose flour
1 C whole wheat flour
2 t baking soda
1 t ground cinnamon
1 t ground ginger
1 t ground cloves
1 t kosher salt, medium flake
Combine oil, 1 C sugar, and butter on medium speed with a hand mixer until well blended, about 3 minutes. Add molasses and egg; beat well.
Combine flours and remaining 5 ingredients, stirring well with a whisk. Gradually add flour mixture to sugar mixture, beating until blended. Cover and freeze dough 30 minutes or until firm.
With moist hands, shape dough into 1-inch balls. Roll balls in remaining 1/4 C sugar. Place 3 inches apart on baking sheets coated with cooking spray.
Bake at 350 for 8 minutes. Cool on pans for 5 minutes. Remove from pans and let cool completely on wire racks. {Slightly adapted from an old recipe in my binder}

I have yet to use molasses in my baking. These cookies look so chewy on the inside, just the way I like my cookies to taste. Delicious!
