These cookies are ridiculously easy to bake. Two words: box mix. Don’t judge.
In fact, you probably have some cake mix in your pantry now, right? Dig it out.
Make a quick dessert for the weekend. It’s Mother’s Day! I’m sure your mom/grandma/etc. won’t turn these down unless she’s a master critique in which case, don’t let her have a bite. Just kidding!
You are allowed only 1 cookie and must give away the rest. Trust me on this.
Lemon Coconut Cookies
Makes: 2-3 dozen
Adapted from My Baking Addiction
Ingredients
1 (18.25 ounce) package lemon cake mix
1 C sweetened coconut
1 C sweetened coconut
2 eggs
1/3 C vegetable oil
Fresh lemon juice (2 lemons)
1/2 tsp lemon extract
Lemon zest (2 lemons)
Directions

+ Preheat oven to 375F.
+ Pour cake mix into a large bowl. Stir in coconut, eggs, oil, lemon juice, lemon extract and lemon zest until well blended.
