You guys! I really didn’t mean to post another baked good recipe but sometimes, that’s how life happens. Either that or I’m nesting big time. After all, only 3 weeks (what the what?!) until the baby’s due date.
A few weeks ago, I discovered a new-to-me blog (thanks, Heather!) Wow, I’m so glad she posted about this blog because it has quickly become one of my favorites. I may or may not have spent a few evenings reading through all most of Monica’s posts.
Not only does Monica a.k.a. The Grommom make me want to move to Hawaii ASAP, she also posted this amazing (healthier!) cookie recipe the other day and I just couldn’t keep staring at the brown bananas on my counter any longer. I knew what they were destined for!
Since I only made a few slight modifications, I’ve noted them below. For the full recipe, head over to Monica’s blog.
Low-Fat Oatmeal Banana Peanut Butter Cookies {click on the link for her recipe & instructions}
*I used coconut palm sugar instead of the brown sugar
*I omitted the chocolate chips
*Instead of butter, I used coconut oil
*I added 2 heaping tablespoons of creamy peanut butter
Verdict? Amazing and these barely lasted more than 2 days. Good thing I still have a few bananas left over! 😉
