This might be the strangest colored food I’ve ever posted here.

The thing is, y’all want this oatmeal to have this awesome shade of purple. Here’s why:
Fresh, sweet blueberries are warmed through and release their juices into the oatmeal while it’s cooking – thus giving the oatmeal its’ color and infusing it with intense, blueberry flavor.
Because how boring would it be to not even taste the blueberries? Omahgaw-boring.
The shredded coconut adds a nice texture to the oatmeal, as well as giving it a natural sweetness. Plus, blueberries + coconut are pretty much one of the best combos known to man me.
Honestly, you might even want to eat this for dessert – no one is stopping you.
Blueberry Coconut Oatmeal
Serves: 1 very hungry person or 2
Time: 10 minutes
1 C coconut milk (I used canned but the refrigerated kind works fine)
1/2 C old fashioned oats
1/2 t vanilla extract
Dash of ground cinnamon
Pinch of salt
1/4 C fresh blueberries
1/4 C shredded coconut
Optional: sweetener of your choice, to taste
Bring coconut milk and oats to a gentle boil on medium heat. Turn down to low heat and stir continuously, letting it simmer for about 8-10 minutes or until oats have absorbed most of the milk. Stir in vanilla, cinnamon, salt, blueberries and shredded coconut. Garnish with additional blueberries and coconut, if desired. Enjoy!
