I posted this on Instagram yesterday and thought I’d share it here as well. Sorry I don’t have any other pictures but this is what happens when I’m scrambling to get ALL.THE.THINGS done while the young sir is napping.
This dessert takes about 5 minutes, can be made dairy-free, and best of all you don’t even need an ice cream maker!
Don’t have mangos? Just sub with more strawberries or pineapple. I’m already dreaming up a variety of combinations. Good thing it’s already getting hot outside.
Strawberry Mango Ice Cream
Yields: about 16 oz. or 4 servings
Time: 5 minutes
3 cups frozen strawberries
1 cup frozen mango chunks
2 tbsp agave (omit for a sugar-free alternative)
5 tbsp milk (use almond or soy for dairy-free alternative)
In a food processor, combine all ingredients and pulse until smooth and creamy. You may have to stop and scrape down the sides. If you’re not eating it right away, store in the freezer. Take it out about an hour before eating and let it defrost in the refrigerator. You could also use the ‘defrost’ function on a microwave if you’re in a hurry. Enjoy!
This satisfies a sweet tooth strike in a pinch and it’s a much better alternative than a spoonful of Nutella or cookie butter.

oh my…i've never ever tried anything like that. So simple, and yet it freezes up to a good texture!? I have to try it. I love a healthy version of dessert since my family seems to think every dinner has to end with dessert! ::)
